Chicken Quesadilla

Components:

    1. boneless chicken breasts
    2. tortilla bread
    3. 1 cup shredded cheddar cheese
    4. 1 red pepper, diced
    5. 1 onion, diced
    6. 2 tbsp olive oil
    7. 1 tsp salt
    8. ½ tsp black pepper

Instructions

Dice the chicken and cook with 1 tbsp olive oil, salt, and pepper for 5–7 minutes.

Sauté onion and red pepper in 1 tbsp olive oil for 3–4 minutes.

Place cheese, chicken, and vegetables on half of a tortilla. Fold.

Cook in a skillet for 2–3 minutes per side until golden.

Slice and serve.
